  • 2 oz cream cheese
  • 3/4 cup shredded mozzarella I used Sargento
  • 1 beaten egg
  • 1/3 cup almond flour
  • 1 Tbsp baking powder
  • 1/2 cup shredded chedder I used Sargento
  • dash black pepper optional
  • dash garlic powder optional


  1. Preheat your oven to 425. Put your cream cheese in a microwavable bowl. Add your mozzarella cheese. Microwave in 15 second intervals till your cream cheese and cheese is melted and you can stir them with a rubber spatula. In another bowl whisk your egg. Now make sure you use a bigger bowl for the egg because everything is going in there. Add your dry ingredients to the whisked egg. Then fold in your cream/cheese mozzarella. Work it into the dough. Then add in your cheddar cheese. Your dough will be very sticky. Lay out a piece of Saran wrap or whatever store brand you may have and put your dough on top of it. Spread a little more almond flour on top so you can fold over the wrap and mold the dough into a ball. Put in the  fridge for about an hour so it stiffens up. Then cut the dough into 4 pieces. Roll them into a ball and then cut that ball in half. That will be your top and bottom bun. Place on a piece of parchment paper or a well greased pan. Bake 12-15 minutes until golden. (note check on them after about 10 minutes as oven temperatures can vary)
