Not Your Mama’s Chicken Salad..


     Hello Mason Jar Family! Well we were off to the beach to another family movie night. We got some Lunchables for the kids. Not something we do often but it was treat night. As for myself, Mama Dawn and Mama April I made us a Bento meal which consisted of my version of chicken salad, a serving of crackers, a hard boiled egg and a few miniatures for dessert..This chicken salad is AWESOME! You can wrap it in lettuce leaves, put it on crackers, make a sandwich or just eat it the way it is. The following recipe makes about 5 cups…1 1/2 pounds of sauteed chicken breast (Chopped into small pieces)
2 tbsp lemon juice
1 tbsp honey
1/2 cup chopped celery (about 2 stalks)
2 cups chopped grapes
3/4 cups canned mandarin oranges (drain and cut into quarters or halves)
1/4 cup chopped water chestnuts
1/2 cup mayonnaise (I will actually cut this down to a 1/4 cup next time)..Also if you want to cut some calories you can add 1/2 cup of yogurt instead of mayonnaise.

Mix everything together and enjoy!
